Planning a Restaurant Before Taking the Big Step

I’ve been thinking about opening a restaurant for quite some time, but I’m trying to be realistic before putting real money into the idea. I've got a concept in mind, and I like a rough idea of the menu, but honestly, there are so many other pieces to sort out. Like rent, staff, food costs, equipment, and getting customers to actually show up.

Right now I’m looking over a business plan of a restaurant to see how other owners have mapped out their costs and what kind of sales they expected. I figure if I have those numbers in front of me, it will make it easier to judge whether the whole thing is actually workable or just sounds nice in my head.

So, for anyone who’s opened a restaurant before, what was the one expense or problem that surprised you the most? Do you have any advice on what I should plan for early, because I’d rather miss fewer steps later?
